EXOTIC RICE
4 CUPS BASMATI RICE (SOAKED FOR 1 HR)
3 RED CHILLIES (FRESH OR DRIED DESEEDED AND CHOPPED)
15 STRANDS OF SAFFRON (APPROX)
MILK OF 1 MWEDIUM COCONUT
2 TABLESPOONS CLARIFIED BUTTER
SALT

MICROWAVE A QUARTER JAM BOTTLE OF WATER. WHEN THE WATER REACHES BOILING POINT ADD THE SAFFRON AND SHUT THE JAR TIGHT. SET ASIDE TO ALLOW IT TO INFUSE.
TAKE A DEEP NON-STICK PAN AND WARM THE FAT. DROP IN THE CHOPPED CHILLIES AND THE RICE.ADD THE SALT. TOSS THE RICE FOR A COUPLE OF MINUTES. POUR IN THE COCONUT MILK AND COOK COVERED FOR AROUND 15 MIN OR TILL DONE. DO NOT OVERCOOK THE RICE. STOP THE COOKING WHEN THE RICE STILL HAS A BITE TO IT.

YOU MAY SERVE THIS RICE WITH A CHICKEN , MEAT, FISH OR PRAWN CURRY.
A SLIGHTLY DRY OR THICK CURRY WOULD BE BEST.

THIS RICE CAN ALSO BE SERVED WITH A GRILLED FISH OR MEAT AND BOILED VEGES.
