FOR PRESSURE COOKING
1 kg mutton
1/2 kg bengal gram flour (Chana dal)
1 big pc root ginger roughly chopped
4/5 bay leaves
5/7 pcs cinnamon sticks
4 black cardamoms
6 green cardamoms
1 tablespoon cumin seeds
2 onions cubed
2/3 green chillies
salt to taste
wash and cut mutton into slivers. soak dal for 10 minutes. add only half a cup of water as all ingredients will release water and you will have one soggy mess. pressure cook together for 10
minutes. Cool cooker contents and immediate grind in a mixie.
to the meat paste add 1 heaped teaspoon chilli owder, cumin powder, pepper powder, garam masala powder. Check the salt. Add more if necessary.
Finely chop 2 onions, some coriander and about six green chillies and add to the above.
break about six eggs and mix thoroughly. wet your hands with water and shape into small flat rounds.
shallow fry .
these are excellent for parties and can be prepared in advance and fried at the last minute.
as all ingredients are already cooked it would take very littletime to finish.
