CHICKEN WITH A YOGHURT DRESSING (raita)

1 CHICKEN CUT INTO PIECES
3 ONIONS SLICED FINE
2 MEDIUM TOMATOES CHOPPED
2 TEASPOONS GINGER GARLIC PASTE
1 TEASPOON CUMIN SEEDS
1/2 TEASPOON TURMERIC POWDER
1/2 TEASPOON CORIANDER POWDER
1/2 TEASPOON RED CHILLI POWDER
1/2 TEASPOON GARAM MASALA POWDER
1 STICK CINNAMON,5 CLOVES, 5 GREEN CARDAMOMS, 1 BAY LEAF
OIL
SALT

FOR THE DRESSING
1 LARGE TUB YOGHURT
1 MEDIUM ONION CHOPPED FINE
3 GREEN CHILLIES CHOPPED
1/2 CUP CORIANDER, CHOPPED FINE
DASH OF SALT AND CUMIN POWDER
Mix into the yoghurt and keep in a glass serving dish.

In a pressure pan put in about 2 tablespoons of oil. Add the whole spices and the onions reserving a little onion to add later. Fry till golden brown and add the ginger garlic paste. Add the chicken and then the salt, turmeric, cumin seeds, coriander powder, red chilli powder in this order allowing each spice its individual time of a few minutes. Then add the chopped tomatoes and the reserved onion. Cook on a low flame for 10 minutes stirring occasionally. add the garam masala powder and 2 glasses of water and cover and cook for 10 minutes. Allow another 10 minutes before removing the vent and opening. Transfer to a serving dish and serve with the yoghurt dressing and chappatis.
