VEG POTATO & MACARONI BAKE

1 KG SMALL POTATOES, BOILED & QUARTERED
100 GMS SPIRAL PASTA, COOKED
1 TABLESPOON MIX OF OLIVE OIL & BUTTER
1 SMALL CUP GRATED CHEESE
1/4 CUP CREAM
1/2 TEASPOON OREGANO/ PEPPER / RED CHILLI POWDER
1/2 CUP FINELY CHOPPED PARSLEY OR CORIANDER
1 CUP STOCK

In a non-stick pan heat the oil/butter combination. Add the potatoes,parsley,oregano and seasonings. Add the pasta and mix. Pour into a baking dish add the soup, cream, cheese and bake. Will be ready in a jiffy. (Can also be baked in a microwave).

IF YOU HAVE BEEN FOLLOWING MY RECIPES, YOU WILL NOTICE THAT I DO NOT DOUSE MY BAKES WITH WHITE SAUCE, WHICH IS NOTHING BUT REFINED FLOUR AND FAT. SOMETHING YOU CAN QUITE EASILY DO WITHOUT. SOME PEOPLE PUT IN AS MUCH WHITE
SAUCE AS THE VEGETABLES THEY USE.

IF YOU REALLY REALLY DO NEED TO USE WHITE SAUCE ADD 1 TABLESPOON CORNFLOUR TO A BOWL OF STOCK & MILK, ADD A FEW CLOVES, A WHOLE ONION, 1 TEASPOON BUTTER AND BRING TO A BOIL. SEASON WITH SALT & PEPPER. KEEP STIRRING TILL YOUR SAUCE IS THICK. ADD AS MUCH CHEESE AS YOU WANT AND USE. NO BAKED DISH IS ANY GOOD WITHOUT A STRONG CHEESE TO ADD FLAVOUR TO IT.
