PASTA IN CHICKEN, RED PEPPER AND WINE SAUCE

I made this a couple of days back and though it may seem that there are too many ingredients.......the taste was so divine that I found it really worth the effort, although I had made the sauce first and used it the next day.

1 red bell pepper chopped fine

1 clove garlic crushed

1 head broccoli chopped fine

1 ear of sweet corn pureed

1/2 teaspoon tabasco

1 tablespoon tomato sauce

1/2 cup finely chopped sundried tomatoes

1/2 teaspoon red paprika

1 cup red wine

1 cup cream

1 teaspoon wild honey

olive oil

1 chicken breast

grated cheese (strong flavour)

1 packet italian whole wheat spaghetti

Place a non-stick pan on the fire and pour in the olive oil. Add the crushed garlic immediately and saute for a minute. Next add the red pepper and cook for a few minutes. Add all the other ingredients (except broccoli and chicken)and simmer till it bubbles. Put off the flame. Next saute the chopped broccoli in a little olive oil and reserve in a bowl.

Cut the chicken breast into thin strips and apply a little salt and pepper and sprinkle a light dusting of cornflour. Saute them for a minute in a little olive oil and reserve in another bowl.

Boil the spaghetti in salted water to which a few drops of oil have been added.

To assemble serve the spaghetti in individual plates. Pour over the sauce and place the chicken and broccoli sttractively on the side. Sprinkle with a little strong grated cheese and warm for a few seconds in a microwave and serve immediately.
