SOUP - CREAMY PUMPKIN
1 KG PUMPKIN CLEANED AND CHOPPED
1 TBSP OLIVE OIL
1 ONION/LEEK/CARROT/CELERY - PEELED AND CHOPPED
4 CLOVES GARLIC - PEELED AND CRUSHED
SALT & PEPPER
1/4 TSP GRATED NUTMEG
1 1/2 LITRES WATER
1 CUP SINGLE CREAM
1/4 TSP RED CHILLI POWDER
HEAT THE OIL IN A LARGE PRESSURE COOKER. ADD THE PUMPKIN PCS AND ALLOW TO COOK FOR A FEW MINUTES. ADD THE OTHER VEGETABLES AND THE GARLIC AND SEASONINGS. ADD THE WATER AND COVER AND COOK FOR FIVE MINUTES.
WHEN COOL LIQUIDISE AND STRAIN INTO A FRESH SAUCEPAN. BRING THE SOUP TO A BOIL AND ADDING THE CREAM SERVE IMMEDIATELY.
