SOUP - HEALTHY BASIL 'N' TOMATO
1 KG TOMATO CUT INTO PIECES
2 CLOVES GARLIC PEELED 7 WASHED
1 TBSP MELTED JAGGERY
1 TBSP BALSAMIC VINEGAR
2 CUPS CHICKEN/VEGETABLE STOCK
6 TBSP YOGHURT
1/2 CUP ROUGHLY CHOPPED BASIL
SALT & PEPPER TO TASTE
In a flat baking dish layer the tomatoes and sprinkle the garlic over it. Next mix the vinegar and oil and sprinkle it over the tomatoes. Place in the oven to cook .....they will be done when lightly charred in places. Either sieve the tomato or run in the mixie and then sieve. Add the stock and seasonings and heat through. Next beat the yoghurt and chopped basil and add to the soup. Serve immediately.
