TOASTED WALNUTS IN CHICKEN WALDORF SALAD

This preparation of the salad is good for high blood pressure patients. To control blood pressure it is recommended that you consume a diet low in saturated fat and rich in a variety of produce, whole-grains and low fat dairy. Healing nutrients include calcium, dietary fibre, magnesium, pottasium and Vitamin C. Also heart friendly fats such as monounsaturated and omega-3s are recommended. Avoid harmful saturated fats and trans fats which are found in animal based foods and commercially prepared foods as these clog your arteries.

1/2 kg skinless boneless chichen breasts
1/2 teaspoon salt and pepper
3/4 cup low fat yoghurt
2 tablespoons horseradish
2 tablespoons fresh lemon juice
3 stalks  thinly sliced celery
4 cups shredded romaine lettuce
2 red apples cut into cubes (do not peel)
2 cups seedless red grapes 

Place the walnuts on a baking sheet and the chicken breasts (after applying about a quarter teaspoon of salt and pepper) on a lightly greased dish and bake . The walnuts will take about 5 minutes. Remove, cool and roughly chop. Remove the chicken also when cooked through and cut into thin strips.
Take a large bowl and mix together the yoghurt, mayonnaise, horseradish, lemon juice and 1/4 teaspoon salt and pepper. Add the walnuts chicken, grapes, celery and the apples. Add the lettuce and toss or serve the dressing on a bed of lettuce.
