CHEESY VEGETABLE PUFF

350 GMS FROZEN PUFF PASTRY, THAWED
125 GMS MOZARELLA CHEESE
1 RED PEPPER
SMALL BUNCH OF SPRING ONIONS
50 GMS PEAS
1 VEG OR CHICKEN SOUP CUBE
1 EGG BEATEN

On a lightly floured surface cut the pastry in half and roll out the pieces. Trim the edges neatly. Keep the trimmings for decorating
Grate the mozzarella , chop the pepper and spring onions. Place all the ingredients in a bowl and mix well. Take a piece of rolled pastry, place the filling in the middle.Apply the edges with water and place another sheet of pastry on top. Press the edges firmly toghether to seal. Take a sharp knife and carefully put 2/3 slashes across the top. Decorate with the pastry strops and brush with beaten egg.
Bake until puffed and golden brown
