(in this recipe the sali refers to the satay stick and the boti to the cubes of meat .....either chicken or mutton/lamb)

The cubes of meat should be cooked in ginger/garlic,turmeric,chilli,salt, oil and either vinegar/jaggery or lime/sugar used flavouring agents.

Boil the potatoes and cool and cut into largish cubes. Add the potatoes to the meat so that pick up a little of the flavouring too.

Soak the satay sticks in cold water for a few hours before using.

Thread the potato and meat cubes onto the sticks alternately. 3 of each should be enough.

Dip into beaten egg and deep fry. Totally delicious.
