WHOLEMEAL MUFFINS

225 GMS (1/2 WHOLEMEAL + 1/2 PLAIN) FLOUR
50 GMS CASTER SUGAR
4 LEVEL TSP BAKING POWDER
225 ML MILK
50 ML VEGETABLE OIL
1 EGG
1/2 LEVEL TSP SALT

Mix the sugar, flour, salt and baking powder in a bowl. In another bowl beat the egg and add the milk and oil to it. Add the egg and milk mixture all at once to the dry ingredients. Stir very lightly to mix - the mixture should still be slightly lumpy. Do not beat.
Grease a muffin pan and spoon the mixture into it. Bake at Gas Mark 6 for 20 odd minutes or until well risen. Test with a skewer to see if done - as it should come out clean. Remove the muffins and serve immediately......split and buttered. If they will be used later toast them before serving.
