JARDALOO MA GOS
DRY MUTTON WITH APRICOTS
1 Kg mutton, deboned, washed and cut into tiny bits
a handful of dried apricots (soaked in a little water for 2 hrs)
3 onions chopped fine
3 tomatoes chopped fine
2 large tablespoons ginger garlic paste
2/3 pcs of cinnamon
a few peppercorns
1 tablespoon chilli powder
1 tsp home made garam masala powder
1/4 cup red wine vinegar

a few peppercorns
1 tablespoon chilli powder
1 tsp home made garam masala powder
1/4 cup red wine vinegar
sugar to taste
Marinate the washed and cut mutton with the ginger/garlic paste, salt, chilli powder, garam masala powder, the peppercorns lightly crushed, cinnamon sticks and a little oil.
Fry the chopped onions in oil (topped by 1 spoon of clarified butter)in a pressure pan till lightly golden. Next add the meat and saute for 10 minutes. Add the chopped tomatoes and continue sauteing till the oil begins to separate. Add half a glass of water and close the pan. Cook for about 15 minutes. Allow the pan to cool down and open. Add the soaked apricots, red wine vinegar and sugar and keep till ready to serve. Heat again before serving. Serve with fine potato straws.
