Simple puri aloo
4 boiled potatoes cubed
Bit of chopped ginger and garlic and half onion
1/2 teaspoon mustard seeds
Pinch of salt / turmeric and chill powder
A pinch of cumin and coriander powder
1 tablespoon chopped fenugreek leaves
2 tablespoons choppedcoriander
3 finely sliced green chillies
A wee bit jaggery sugar
1/2 lime
Using mustard il / extra virgin olive oil ...
Fry the mustard seeds till they crackle. Add onion and ginger/garlic.
Add the potato cubees and fenugreek; then the powders and coriander leaves.
Add the sugar.
Add a little water and allow to simmer for 5 min.
Squeeze in half a ime.
Serve with puris and some sliced onions
