CABBAGE WITH MUTTON

CABBAGE WITH MUTTON (simply delicious)

2 small cabbages chopped fine
1/2 kg mutton chopped into really small pieces
3 large onions chopped fine
1 small cup peas
1 small cup diced potato
1 small cup diced carrots
6 green cardamoms
1 stick cinnamon
6 cloves
1 teaspoon red chilli powder
1 teaspoon cumin seeds
1/2 teaspoon garam masala powder
1 teaspoon ginger/garlic paste
1 small tomato chopped

Heat the oil in a pressure pan and fry the diced carrots and potatoes and the
peas. Add a pinch of salt to prevent the vegetables from sticking to the base.
Remove the vegetables when almost done. Next fry the chopped onions
along with the cinnamon, cloves and crushed cardamoms till lightly golden.
Add the ginger/garlic paste and the meat and cumin seeds and red chilli
powder and saute till almost done keeping the lid on but not sealed.
Add the tomato and saute some more.
Add all the balance items and close the cooker. Keep the flame low and
cook for 15 minutes. Keep the lid closed till cool then empty into a glass
dish and refrigerate till ready to use.
In these days of the microwave you need to only plate your food and
warm as much as you want. The rest remains refrigerated till needed.







CABBAGE WITH CHICKEN (VEGETARIANS CAN SIMPLY OMIT THE CHICKEN)

1 MEDIUM CABBAGE CHOPPED FINE
1/2 KG CHICKEN EITHER BONELESS OR WITH BONE CUT INTO SMALL PCS
1 BIG ONION
1 CARROT DICED SMALL
1/2 CUP PEAS
3 POTATOES DICED SMALL AND FRIED
3/4 GREEN CARDAMOM
1 TSP GINGER/GARLIC PASTE
SALT
1/4 TSP RED CHILLI POWDER
1/4 TSP CORIANDER POOWDER
1/2 TSP GARAM MASALA POWDER
OIL
2 BAY LEAVES

HEAT THE OIL AND ADD THE BAY LEAVES AND CUMIN SEEDS. ADD THE ONIONS
AND FRY TILL LIGHTLY BROWNED. ADD THE GINGER GARLIC PASTE, CHILLI POWDER AND CORIANDER POWDER. aDD THE CHICKEN PCS NEXT. aDD THE CABBAGE, CARROT AND PEAS NEXT AND COVER AND COOK. POUND THE CARDAMOMS AND ADD TO THE POT ALONG WITH THE GARAM MASALA. ADD THE FRIED POTATO CUBES, MIX AND SERVE.
