2 small eggs / 1/4 tsp ginger-garlic paste / salt & pepper
for the stuffing (to be mixed together)
1 small onion chopped fine / 1 green chilli chopped fine
2 tablespoons chopped coriander / a little shredded chicken (use left over chicken from a previous meal )
2 small teaspoons clarified butter.
Break the eggs and add the salt/pepper/and herb paste. Beat.
Heat a non-stick pan with the fat and pour in the eggs. Let it set but not brown and flip over. Put the chicken mixture down the middle and close from either side.
YOU MAY ADD A LITTLE GRATED CHEESE TO THE CHICKEN FILLING AND THAT WOULD TURN THE OMLETTE INTO A MEAL.
