CHEESY OMLETTE

2 SMALL EGGS / A PINCH OF GINGER-GARLIC PASTE / 1 SMALL GREEN CHILLI /
SALT -PEPPER TO TASTE / GRATED CHEESE (CHEDDAR IS FINE).
1 TABLESPOON MIX OF OIL AND CLARIFIED BUTTER.

HEAT THE FAT IN A NON-STICK PAN. MIX ALL THE INGREDIENTS INTO THE EGGS AND BEAT ...........BUT LEAVE OUT THE CHEESE. POUR INTO THE PAN AND LET IT JUST SET ON A LOW FLAME. FLIP OVER THE OMPLETTE AND PLACE THE GRATED CHEESE DOWN THE MIDDLE. FOLD OVER BOTH THE SIDES AND FLIP ONCE AGAIN TILL GOLDEN AND SERVE IMMEDIATELY WITH TOAST OR CHAPPATIS.
