A WELL MADE FLUFFY PLAIN OMLETTE
2 SMALL EGGS / SALT AND PEPPER TO TASTE
1/4 TSP GINGER-GARLIC PASTE / ONE SMALL GREEN CHILLI DESEEDED (OPTIONAL)
OIL OR CLARIFIED BUTTER - 1 TABLESPOON
HEAT A FLAT NON-STICK PAN AND ADD THE FAT. MIX ALL THE OTHER INGREDIENTS AND BEAT WELL. KEEP THE FLAME A LITTLE HIGH SO THAT THE OMLETTE COOKS FAST, BECOMES A GOLDEN COLOUR AND RISES WHILE COOKING. ADD THE BEATEN EGG MIXTURE TO THE HOT PAN AND LET IT COOK ON ONE SIDE TILL LIGHTLY GOLDEN. FLIP THE OMLETTE OVER TILL THE OTHER SIDE IS GOLDEN TOO. SERVE IMMEDIATELY WITH WARM TOAST OR CHAPPATIS.
