HEALTHY HERB OMLETTE

RODA'S SPECIAL -   HEALTHY HERB OMLETTE

3 EGGS / 1 BIG ONION CHOPPED FINE / 1 SMALL CUP CHOPPED CORIANDER LEAVES / 2 TABLESPOONS CHOPPED FENUGREEK LEAVES / 1 SMALL PC OF FRESH ROOT GINGER / 1 GREEN CHILLI / 1/2 SMALL GREEN MANGO CHOPPED FINE (WHEN IN SEASON) / 1 TABLESPOON MIX OF OIL AND CLARIFID BUTTER / SALT & PEPPER TO TASTE / A PINCH OF TURMERIC.

HEAT THE FAT IN A FLAT NON-STICK PAN. BEAT ALL THE INGREDIENTS TOGETHER WITH THE EGGS AND POUR AT ONCE INTO THE FAT. lET IT SET AND COOK COMPLETELY ON ONE SIDE (WHICH MEANS THAT IT MUST BE GOLDEN) FLIP OVER AND COOK THE OTHER SIDE. SERVE HOT.

WHEN COOL THIS OMLETTE CAN BE USED AS A SANDWICH FILLING TO TAKE TO WORK OR WRAPPED WITH A CHAPPATI ALSO.

THIS IS A VERY HEALTHY WAY TO EAT EGGS AS YOU ARE INCORPORATING GREENS INTO YOUR DIET AND THEY TRULY ENHANCE THE FLAVOUR OF THE OMLETTE TOO.
