2 WHOLE BRAINS (MUTTON OR LAMB) CLEANED AND CUT INTO PCS
1 ONION CHOPPED FINE,
A HANDFUL OF CHOPPED CORIANDER
2 GREEN CHILLIES CHOPPED FINE
A DASH OF TURMERIC AND RED CHILLI POWDER
WHOLE WHEAT FLOUR
1 OR 2 EGGS AS REQUIRED
Mix the chopped onion, coriander,chillies and the spice powders into the brain. Gently shape into cutlets. Coat with the flour and then the egg and shallow fry in a non-stick pan.
BRAIN IS AN OFFAL AND IS HIGH IN CHOLESTROL AND SO ARE EGGS. ANOTHER METHOD WOULD BE TO COAT IT IN A BATTER MADE OF BENGAL GRAM FLOUR
SALT AND PEPPER AND A PINCH OF BAKING POWDER. BEAT TILL LIGHT. DIP CUTLET AND FRY.
