1 KG FLAT BONELESS PIECES OF FISH
Marinate in just a little garlic,chilli-cumin paste, salt and pepper and a teaspoon of olive oil.
1 small cup all purpose flour
1/2 teaspoon baking powder
1 egg white
2 teaspoons oil
approx 1/2 a cup of warm water
Add the salt to the flour, then add the oil and warm water and
make a thick batter. Leave to stand for about an hour or till
ready to use. Add the baking powder and the beaten egg white
and use. Dip the fish pieces in the batter and deep fry till
lightly golden. The oil must first be heated and the flame
lowered so that the the batter does not burn and the fish
inside is cooked through. Serve immediately.
