SPINACH AND PASTA BAKE (VEGETARIANS CAN SIMPLY OMIT THE BACON)

2 CUPS PUREED SPINACH
2 CUPS 3 COLOUR PASTA COOKED
3/4 CUP CHEESE ROUGHLY CHOPPED
1 CUP TOMATO PUREE
2 RASHERS BACON CHOPPED
2 SLICES BREAD MADE INTO CRUMB
1 CUP SPRING ONION FINELY CHOPPED
1 POD GARLIC CRUSHED
1 TABLESPOON OLIVE OIL/BUTTER
1/4 TSP RED CHILLI POWDER/ PEPPER

Put 1 tablespoon olive oil and 1 tablespoon butter in a non-stick pan and heat. Add the crushed garlic and fry till lightly golden. Add the chopped bacon and fry for two minutes. Next add the spring onions and cook for two minutes.
Grease a glass baking dish and pour in the spinach and tomato puree. Season with the salt, pepper and red chilli powder. Mix the pasta into the fried spring onion and bacon and add to the dish. Sprinkle the cheese evenly on top. Cover with the fresh bread crumbs and bake.
In a regular oven on Gas Mark 4 for a 1/2 hour. In a microwave with grill for 15/20 minutes
or until the top is golden.
Serve with a glass of wine.
