The cottage cheese can be made from scratch at home...recipe for which has already been given by me. Use the lime method which gives a firmer cheese
On the other hand you could use the commercial variety too.
500 gms cottage cheese, cubed
2 tablespoons chopped spinach
2 tablespoons chopped coriander
1 tablespoon chopped mint
1 tablespoon chopped fenugreek leaves
5 green chillies chopped
1 teaspoon ginger/garlic paste
1/2 teaspoon cumin powder
1/2 teaspoon red chilli powder
1/2 teaspoon pepper powder
A little oil
1/2 teaspoon sugar
1 cup thick curd
Take the chopped coriander, spinach, fenugreek, mint and green chillies and
puree in a mixie.
Dice the cottage cheese carefully with a cleaver or any large knife. Heat the oil and pour in the puree - Add the spices one at a time and then the curd and sugar. Place the pieces of cottage cheese into the cooking puree taking care not to break them. Allow to simmer till the water is absorbed and the oil separates. Keep in a flat serving dish and serve.
This dish can either be served as finger food or as a side dish. It has lots of flavour as a mix of greens are used.
