TOMATO & BASIL BRUSCHETTA (my way)

1/2 cup extra virgin olive oil
2 cloves crushed
3 tomatoes , deseeded, chopped into neat small cubes
1 bunch fresh basil chopped
powdered pepper
1/2 cup grated cheddar
1/2 cup grated mozarella
bread slices cut to your choice e.g. squares or rounds

Take the bread pieces and toast them lightly on a hot griddle.
Mix the oil and crushed garlic and spread on the toast. Mix the chopped tomato, basil and pepper and place a heap on the bread . Mix the mozarella and cheddar and cover the tomato. Place in a hot oven for a few minutes till the cheese melts. Serve hot or cold.
This method will eliminate the tomato falling off the bread when being
served. Also the cheddar adds a little flavour to the mozarella. Hey.............. these end up being mini bite sized pizzas..... come to think of it. They are great as appetisers and make great finger food to be had with drinks !!!!!!
