BLANCHING AND STORING PEAS FOR MONTHS

PEAS ARE ABUNTANTLY AVAILABLE AROUND THIS TIME OF THE YEAR SO IT MAKES SENSE TO FREEZE THEM FOR USE LATER IN THE YEAR WHEN THEY ARE VERY EXPENSIVE.

SHELL THE PEAS AND WASH THEM. TAKE A BROAD VESSEL AND FILL IT WITH A QUARTER INCH OF WATER. LET THE WATER REACH BOILING POINT AT WHICH TIME DROP IN THE PEAS AND COVER.
SIMMER FOR A FEW MINUTES ONLY. IF A BIG QUANTITY, THEN FIVE MINUTES ARE NECESSARY.

PUT THE FLAME OUT AND LET STAND FOR ANOTHER FIVE MINUTES. THEN DRAIN AND STORE IN SMALL TUPPERWARE CONTAINERS. THE QUANTITY SHOULD BE ENOUGH FOR A SINGLE USE. DO NOT REFREEZE.
