VEG - POTATO/PEA CUTLETS

FRESH PEAS ARE BACK AND I BEING A LOVER OF THEM HAVE STARTED PULLING OUT ALL MY PEA RECIPES. I JUST MADE THESE CUTLETS LAST NIGHT AS A SIDE DISH AND SERVED THEM WITH A MILD TOMATO GRAVY, WHICH WAS WELL LIKED BY ALL. THE TOMATO GRAVY RECIPE IS AVAILABLE ON THIS SITE SO I WILL JUST GIVE THE CUTLET RECIPE.

3 LARGE POTATOES, BOILED AND MASHED
1 CUP PEAS * BLANCHED AND MASHED ROUGHLY
3 EGGS BOILED AND CUT INTO HALVES
GRATED GOUDA CHEESE OR CHEDDAR
1 LARGE  ONION CHOPPED FINE
1 TABLESPOON CHOPPED CORIANDER
2 GREEN CHILLIES CUT
1/2 TEASPOON EACH PEPPER/RED CHILLI POWDER
SALT TO TASTE

GENTLY MIX ALL THE ABOVE INGREDIENTS AND SHAPE INTO OVALS AROUND HALF AN EGG.  BEAT 3 EGGS WITH A LITTLE WATER AND SALT. DIP THE CUTLETS IN THE BEATEN EGG AND SHALLOW FRY.
THESE CUTLETS MAY ALSO BE SERVED WITH THE MOONG DAL GIVEN ELSEWHERE ON THIS BLOG.
