WHOLE WHEAT CHAPATTIS (ALSO CALLED ROTIS
OR PHULKAS OR INDIAN BREAD)

2 cups whole wheat flour
2 tablespoon mix of bajra, jowar and roasted soya bean flour
2 tablespoons oil
salt to taste
water....as required to make a stiff dough

In a flat basin mix all the flours and salt. This incorporates air. Make a well in the centre and put in a portion of oil. Add water to the oil. This breaks up the oil and makes it go a long way. Use enough water to bind a firm dough. Add the balance oil and knead well. The longer the dough is knead, the more pliant it will be. Form little rounds and cook on a griddle till well cooked on both sides.
