SOUP - QUICK BROCCOLI & CHICKEN
1 HEAD BROCCOLI - WASHED AND CUT
1 SMALL CHICKEN BREAST OR 2/3 BONY PCS
2 POTATOES PEELED AND DICED
1 LEEK SLICED
1 STOCK CELERY, SLICED
1 GARLIC CLOVE PEELED
1 BAY LEAF, 4 CLOVES, 1 FEW PEPPERCORNS
1 TEASPOON OLIVE OIL
1 LEVEL TEASPOON CORNFLOUR
SALT & PEPPER TO TASTE

Take a large non-stick pan and add the teaspoon of oil to it. Cut the chicked into tiny cubes or chop roughly with with a cleaver. Add a little salt and pepper to the cornflour and coat the chicken with it. Saute in the oil for a minute or two and remove from the pan. Add 5 cups water to the pan and add the rest of the ingredients. Bring to a boil and let it simmer for another 20/25 minutes. Allow to cool. Then strain most of the liquid and puree the rest. Return the puree back to the pan , along with the chicken and check the seasoning. Serve either with croutons or plain.
Broccoli is very very good for you...........but a lot of people do not like to eat it..........if it is in a form of a soup and cannot be seen...........it would make it that much easier to eat.
