VEG - BROCCOLI & POTATO SOUP
1 head broccoli, chopped (do not discard the stalks)
2 potatoes diced
1 leek sliced
1 stalk celery , sliced
3 cubes maggi veg cubes
1 bay leaf, 4 cloves, a few peppercorns
1 clove garlic, crushed
salt and pepper
Take a pan and fill it with 5 cups of water and bring to a boil. Add the chopped vegetables and seasonings, EXCEPT the soup cubes and allow to simmer till the vegetables are almost done..........about 15/20 minutes. Strain out most of the liquid and allow to cool. Puree the rest and return back to the pan. Add the soup cubes and allow to simmer for about five minutes. Serve with either croutons or plain.
This is a pleasant way of eating your broccoli. The soup can be made in advance . Broccoli being a strong scented vegetable the potato in the soup tones it down.
