15 - 20 LARGE STRAWBERRIES
APPROX 250 GMS SUGAR
QUARTER CUP WATER
Wash the strawberries well, discard any fruit that is not good and chop into quarters.
Take a heavy bottomed pan and bring some water to the boil in it. Throw away the water. This is to sterilise the pan. Next add the sugar and water and bring to a boil with the cloves. Allow to simmer for a while and then add the fruit. The fruit releases water so allow it to cook for 5 minutes.
If you like a tarty taste add the juice of half a lemon while adding the fruit.
Allow to cool just a bit and bottle while still hot.
Store in the refrigerator.
THIS JAM WILL BE LIQUIDY BUT THE PIECES OF STRAWBERRY WILL BE VERY VISIBLE. THE COLOUR OF THE JAM WILL BE A RICH STRAWBERRY COLOUR AND IT WILL HAVE THE MOST NATURAL TASTE OF A FRUIT JAM.
