COOKIES - ALMOND AND CINNAMON COOKIES
175 gms ground almonds
75 gms caster sugar
1 tablespoon powdered cinnamon
2 egg whites
a little icing sugar for dredging
The oven should be on Gas Mark 4 (180C / 350F).
You can grease the sheet with oil . Whisk the egg whites until they are stiff and mix in the ground almonds sugar and cinnamon. The mixture will be quite firm. Place spoonfuls of the mixture on the baking sheet and bake for about 10 to 15 minutes. These cookies should be soft inside or else they will become too hard and tough when cool. Dredge a little icing sugar if so required and store.
