115 gms caster sugar
2 teaspoons golden syrup
115 gms unsalted butter
150 gms self raising flour
75 gms porridge oats
200 gms bitter chocolate roughly chopped
1 egg
1 tspoon vanilla
Optional : finely chopped fresh ginger Makes abt 20
Oven gas mark should be at 5 (190C / 375F). Two baking sheets lightly greased.
With an electric beater cream the butter and sugar together with the golden syrup. Add the vanilla and the egg next and continue beating. Sift the flour and fold it in lightly. Add the oats and chocolate alternately till it is all used up. Place spoonsfuls of the mixture in heaps leaving space for spreading as usual.
These will require at least 15 to 20 minutes for turning a pale golden.
