SPINACH BAKED WITH EGGS
500 GMS SMALL SPINACH LEAVES
2 LARGE ONIONS FINELY CHOPPED
5 TABLESPOONS LIGHT CREAM
1/4 TEASPOON GRATED NUTMEG
A LITTLE OLIVE OIL
4 EGGS
1/2 CUP GRATED CHEESE
SALT & PEPPER
HEAT A LITTLE OIL IN A PAN AND FRY THE ONIONS FOR 5 MINUTES. ADD THE WASHED BABY SPINACH LEAVES AND COVER FOR 2 MINUTES BY WHICH TIME THE LEAVES WOULD HAVE WILTED. ADD THE SEASONINGS AND THE CREAM AND PLACE IN A SHALLOW BAKING DISH. BREAK THE EGGS EVENLY AND SPRINKLE OVER THE CHEESE. BAKE TILL THE EGGS ARE SET AND SERVE.
