CAKE - QUICK , EASY and HEALTHY BANANA CAKE

THIS CAKE IS MUCH LOWER IN SUGAR. USING SUNFLOWER OIL MAKES IN LOWER IN SATURATED FAT TOO.
BANANAS, RICH IN POTTASIUM ARE VITAL FOR NERVE AND MUSCLE FUNCTION AND ALSO HELP TO REGULATE BLOOD PRESSURE.

400 gms of ripe bananas (weigh with skin on)
50 gms light brown sugar
250 gms flour (use half wholewheat and half flour)
1 1/2 tsp baking powder
6 tablespoons of sunflower oil
6 tablespoons mlk
2 eggs

100 gm raisins or sultanas
Line the bottom of a 7" baking tin with greased butterpaper.
1) Whisk together the oil, milk and eggs.
2) Sift the baking powder with the flour and mix in the sugar.
3) Mash the bananas .
4) Add the whisked ingredients into the flour bowl and mix in. Add the bananas and raisins and pour it all into your baking tin.
Bake on Gas Mark 4 or 180 Deg C or 350 Deg F until the cake is well risen.
Should take about 45 minutes. Leave the cake in the tin for a further 15 minutes and then remove.
If stored in a tupperware airtight container will last till it is finished...about 4 days.
