2  cupts self-rising whole-wheat flour
2  teaspoons baking powder
2 tablespoons brown sugar
1/2 cup apricots finely chopped
1/2 cup orange flakes de-skinned
1 banana mashed (just before adding)
1 teaspoon finely grated orange-rind
1 large egg
1 1/4 cup milk
2 tablespoons  oats
3 tablespoons oil

You may line a muffin pan with paper liners or bake them directly in the pan.
Preheat the oven. In a large mixing bowl sift the flour and baking powder. Do not discard what is left.....add it to the mixing bowl. Next add the chopped apricots and sugar. Add the rest of the ingredients and mix to form a batter. Pour the batter into the muffin pan and bake for 30 minutes until well risen. Check by piercing the centre with a toothpick.....if it comes out clean..they are done.
Serve warm with a little honey or a little fruit spread.
