ORANGE n RAISIN COOKIES

These are not only amazingly tasty.....they are also easy to make .
Reduce the fat and sugar just a wee bit to make them a little healthier too!! 75 gms each of  butter and sugar should do quite well. Add a tablespoon or two of freshly squeezed orange juice instead. It works quite fine.

100 gms softened butter
100 gms caster sugar (stored with a vanilla pod)
150 gms flour 
100 gms seedless raisins
1/2 tsp baking powder
1 beaten egg
1/4 teaspoon salt
1 large tablespoon finely chopped orange rind

All ingredients ........except the chopped orange rind and raisins....should be placed altogether in a bowl and mixed lightly with a electric hand beater. Stir in the raisins and orange rind. Drop spoonfuls onto a greased baking tray and bake at Gas Mark 5  or 190 C . They will be done in 10/15 minutes so do stay close to the oven while baking.
If you bake them on greaseproof paper you can simply slide the sheet off the tray and add another to continue. Don't place them too close to each other as they will spread.
