CHEESE ON TOAST - INDIAN STYLE

THERE ARE SO MANY WAYS TO MAKE A CHEESE ON TOAST BUT I LIKE THIS ONE THE BEST BECAUSE YOU DO NOT NEED TO USE AN OVEN FOR GRILLING - SIMPLY USE YOUR NON-STICK PAN AND ENJOY !!!

1 piece strong cheese like gouda, etc }
1 piece cheddar - britannia is good    }roughly chopped
1 small onion finely chopped
2 tablespoons chopped coriander
1 green chilli finely chopped
2 eggs
salt/pepper
olive oil for cooking

Mix all the ingredients and beat together as for an omlette. Heat your non-stick pan and put in a few drops of oil. Place  spoonfuls of the mixture on the slice of bread and upturn quickly into the pan. Cook on low heat till set and begins to turn a golden brown. Flip over and allow the second side to toast a little. Remove from the pan and repeat till the mixture is all used up.
