8 oz butter
8 oz caster sugar
2 small eggs
16 ozs plain flour
1 level tsp ground cinnamon
1 tsp grated lemon rind
milk as required

Cream the fat and sugar, then beat in the eggs. Sift the flour with the cinnamon and add to the creamed mixture. Add the grated rind. Mix to a stiff consistency by using a little milk. Roll out fairly thinly and stamp out the rounds with a cutter. Place on a greased baking sheet and bake on Gas Mark 4 till light golden in colour.
