STUFFED EGGS ALA MORNAY, WITH BROCCOLI

4 hard boiled eggs (shelled with still hot)
1/2 onion chopped
25 gms mushrooms. chopped
20 gms butter
200 gms broccoli
1 tablespoon grated cheese

Mornay sauce
1/2 pint of bechamel sauce (given on my site) then add 75 gms cheddar cheese or 50 gms Gruyere and 25 gms parmesan cheese.

Halve the eggs and remove the yolks. Fry the mushrooms and onion till golden. Mix the yolks with the mushroom mixture and spoon back into the whites. Steam the broccoli and arrange in an ovenproof dish alternating with the egg whites. Spoon the sauce mainly over the broccoli. Then use up the extra cheese and place under a hot grill for a few minutes.
