YOGHURT WITH HONEY NUTS AND CHERRIES

YOGURT WITH HONEY NUTS & CHERRIES

A simple, healthy and not so difficult to organise breakfast. But don't be fooled by its simplicity - it is packed with amazing nutrients which will help you feel full right upto lunch time. Yogurt has living bacteria in a protein-rich base endowing it with more potent immune-enhancing substances than any other food, honey gives you instant high energy and it is well absorbed by the human digestive tract., the nuts are full of heart friendly fat which stimulate your immune system's response to cellular changes - and cherries have antioxidant potemntial to reduce the risk of developing cancer by neutralising free radicals.

2 tablespoons honey
mixed unsalted nuts (almonds, walnuts, pista and cashews)
8 tablespoons plain yogurt
1 small cup cherries

Keep the almonds in a tiny bowl with a wee bit of water and microwave for a minute. Leave for a few minutes in the microwave and remove. This is called blanching and makes the almonds more easy to chew. In another small container place the walnuts, pista and cashews and microwave for 1/2 a minute.
Never remove anything from a microwave immediately - always leave it standing for another 2/3 minutes as the cooking process is never complete immediately. Now place all the nuts together in one bowl with the honey and warm through for another half minute. Pour over the yogurt and add the cherries and serve.
