CHICKEN BREASTS WITH SAGE

3 chicken breasts, skin removed, deboned and cut into halves,lengthwise.
seasoned flour (add salt, pepper and a little red chilli powder to flour)
1 tablespoon olive oil,
1 tablespoon butter
1/2 cup white wine
1/2 cup chicken stock
sage leaves roughly chopped
salt and pepper

Coat the chicken pieces with the seasoned flour. Heat the oil and butter in a pan over moderate heat and lightly brown the chicken. When the chicken is golden brown pour in the wine and enough stock to cover about 2/3rds of the chicken pieces. Add the roughly chopped sage and cover. Simmer for 10/15 minutes. Then remove the chicken pieces onto a serving dish and keep warm. Increase the heat and rapidly boil the gravy till it is of a coating consistency. Season with salt and pepper. Pour the gravy over the chicken and serve at once with some green vegetables.
