COCONUT CREAM AND MILK

Fresh or processed coconut can yield both cream and milk which can then be used for many types of cooking.
Fresh is always best. Break a coconut in half and scrape out the flesh. Grind it fine and pour 1/2 a cup of boiling water. Let it stand for about 15 minutes and squeeze through a cheesecloth to get cream.
For coconut milk put 2 cups cold water in the ground coconut and boil. Allow it to stand for about 15 minutes and squeeze through a cheesecloth as above.
