SPICED MOROCCAN CARROT SOUP


SPICED MOROCCAN CARROT SOUP
1 Tablespoon olive oil
1 medium onion thinly sliced
1/2 kg carrots thinly sliced
3/4 tsp cinnamon
1 1/2 tsp ground ginger garlic paste
3/4 tsp turmeric powder
1/2 tsp red chilli powder
1 cup carrot juice
2 tablespoons tomato paste
3 tablespoons rice
salt to taste
1/2 tsp pepper
1/2 cup chopped coriander

In a medium saucepan heat the olice oil and add the onion. Cook till the onion is golden. Add the chopped carrots and spices and stir fry for a minute or two. Add the balance ingredients and 2/3 cups of water. Cover and allow to simm for about 20 minutes or so or until the rice and carrots are tender.
Cool a little and puree till smooth. Sprinkle the chopped coriander and serve.
