CHICKEN - RICH CURRY

1 Chicken cut into pieces
3 cups milk
10 gms poppy seeds
10 gms melon seeds
10 almonds
6 green cardamoms
1/4 teaspoon nutmeg powder
1 piece mace
1 tsp garam masala powder
2 tsp ginger/garlic paste
a few strands of saffron
salt to taste
100 ml clarified butter

Gring the almonds, melon and poppy seeds to a paste. Heat the butter and lightly fry the ginger/garlic paste. Next add the chicken and saute for a while. Add all the other ingredients except the saffron and salt. Keep cooking for another ten minutes. Add the milk and cover and cook. When almost done add the salt and saffron. When the ghee floats on top it is ready .
