BRAIN OMLETTE


2 BRAINS (MUTTON OR LAMB)
2 TABLESPOONS CLARIFIED BUTTER
8 EGGS
1 ONION CHOPPED FINE
1/2 CUP CORIANDER LEAVES CHOPPED FINE
6 GREEN CHILLIES
SALT TO TASTE


Boil the brains in very little water for a couple of minutes. Remove the membrane and roughly mash.
Break the eggs and beat. Add all the ingredients excepting the clarified butter. Heat the butter in a frying pan and make the omlettes.
