OEUFS  BLANC


6 lightly poached eggs
2 cups elegant white sauce
6 slices of  fried toast
1 tablespoon chopped coriander leaves
a sprinkle of red chilli powder for colour and flavour

In an oblong baking dish arrange the 6 toasts in 2 rows. Place the eggs carefully on the toast and pour over the white sauce. Sprinkle with coriander and the chilli powder and serve.  Warming it for five minutes in an oven just before serving would be best.
