15 (lamb or mutton) trotters (forefeet only)
250 kidney beans (chora) soaked
500 gms onions chopped
clarified butter
2 tablespoons dhansak masala
1 teaspoon turmeric
1 tbsp salt
2 tablespoons ginger/garlic paste
1 tsp pepper powder
4/5 large cinnamon sticks
4/5 chopped green chillies and some chopped
coriander leaves for garnishing
Clean and wash the trotters. Put them in a large vessel, cover with water and cook till half tender. Fry the onions till golden brown. Add the ginger/garlic, turmeric, dhansak masala, pepper and fry. Add the chopped coriander and chillies. Add the beans and the masalas and everything else to the trotters and cook till done. When cooked in this fashion (slow cooking) it has amazing flavour.
Alternately the whole process can also be done in a pressure cooker. But first the trotters for one cooking and with the beans and masalas for the second cooking.
