PINEAPLE n GINGER POUND CAKE

PINEAPPLE  n  GINGER POUND CAKE


1 cup softened butter
1 1/2 cups granulated sugar
3 cups al purpose flour
1 tsp baking powder
1/2 tsp salt
2 tsp ground ginger
2 tsp almond extract
6 large eggs (at room temp)
1 cup crushed pineapple
1/4 cup coarsely chopped crystalized ginger
1/4 cup milk

Preheat the oven. Butter and flour a 10 inch pan. Sift the flour, baking powder and salt  and add the ground ginger. Beat the butter, sugar and almond extract until light and creamy and add the eggs one at a time. Next beat in the crushed pineapple and the flour and the milk - adding  them  alternately until completely used up.Finally add the crystalized ginger and bake till golden. Cool the cake a little and turn out on a wire 
rack  to cool completely. Will last longer if refrigerated.
