CHOCOLATE CHEESECAKE
BASE : 4 tbsp melted butter
15 graham crackers finely crushed
3 tbsp caster sugar
2 tsp cocoa powder
CHOCOLATE LAYER
800 gms mascarpone cheese
1 1/2 cups sifted confectioners sugar
juice of 1/2 orange
grated rind of 1 orange
175 dark chocolate, melted
2 / 3 tbsp brandy

2 / 3 tbsp brandy
Take the crushed crackers, sugar, cocoa powder and melted butter into a bowl and mix well. Grease an 8 inch cake pan and press the the mixture evenly over the base.
Take the mascarpone, sugar, orange juice, rind, melted chocolate and brandy and mix together until thoroughly combined. Spread this over the crumb base and chill for 4/5 hours atleast.
Remove the cheesecake onto a serving platter, decorate with chocolate shavings and bits of blanched orange rind and serve.
