AMBAKALIO - PARSI MANGO RELISH



AMBAKALIO
a relish made with alphonso or any other local mango


2 /3 Mangoes
5 tbsps Clarified Butter or Butter
2 large onions sliced
2 1" sticks cinnamon
10 cloves
10 green cardamoms
200 gms jaggery (gur) 
4 green chilles chopped
2 tbspoons chopped coriander leaves
1 tsp salt
1 cup water


Heat the clarified butter in a pan and add the onion and the spices and allow to saute lightly. Add the rest of the ingredients and simmer for about 4 minutes. Stir but not vigorously so that the mango slices do not break. A lovely accompaniment to a meal especially dhansak and so easy to make.
