BROCCOLI AND LEEK SOUP

BROCCOLI AND LEEK SOUP

1 small head of broccoli cut into florets
1 stick of leek chopped
1/2 red pepper
1/2 yellow pepper
1 potato cut into cubes
few pieces of bony chicken (for non-vegetarians)
wings / necks, etc
1 tablespoon freshly crushed garlic
1 tsp pepper
1 tsp salt
1/2 tsp red chilli pepper
1/2 tsp cardamom/nutmeg powder
1 tbsp extra virgin olive oil

Place the oil, garlic and all the veges except the peppers, seasoning and chicken pieces into a pressure pan and stir fry for a few minutes. Add the peppers, water as required, close the vent and cook for 10 minutes. Cool and strain out the veges. Puree them in a mixie and return back to the pan. If too thick dilute with a little milk. If not using immediately store in a glass dish in the fridge.
Will keep well for a couple of days. When you want to have it pour into a soup dish, add a bit of cream and microwave till warm , garnish with a little grated cheese and serve.  

This is my own personal combination and I can tell you that it tastes great. A great way to get your family to eat broccoli. In fact this is a soup high in Vitamin C cause of the broccoli and peppers.
